Weight Loss with Apricots

Ingredients
1/4 cup apricot spreadable fruit
Juice and pulp of 1 lemon (about 2 1/2 Tbsp)
1 1/4 lb tilapia fillets (see Note)
1/8 tsp onion powder
2 Tbsp chopped fresh parsley
Salt and pepper
Preparation
:: Heat oven to 425°F. Spray baking dish with nonstick cooking spray.
:: Apricot spreadable fruit in small bowl. Squeeze juice and pulp of lemon into bowl and stir to combine.
:: Fish fillets and pat dry. Season lightly with salt, pepper and onion powder.
:: Place fillets in baking pan.
:: Brush apricot mixture on top of fillets.
:: Bake for 10 to 12 minutes, 10 minutes per in. thickness of fillet). Bake until fish is white and flaky.
:: Garnish fish with fresh parsley.
